Now, we all know pasta is a crowd pleaser when it comes to a family dinner recipe. This dish is not only budget friendly, but also a great way to use up the leftover veggies in the fridge!
Ingredients
· 300-400g of pasta
· 1 courgette
· 1 large red onion
· 1 red pepper
· 1 broccoli
· 1 cup cherry tomatoes
· Salt and pepper
Sauce
· ¼ cup of olive oil
· ¼ cup of parmesan
· 1 garlic clove
· 1tsp of dried Italian herbs
· Salt and pepper
Method
1. Pre- heat the oven to about 220°C
2. Prepare and cut the vegetables and place them into a large mixing bowl.
3. Add some olive oil, salt and pepper to the mixing bowl and stir well until the vegetables are coated.
4. Pour the vegetables on a roasting tray and place it in the oven.
5. Roast for about 30 mins or until they are well done.
Preparing the sauce
1. Combine all the ingredients together (olive oil, grated parmesan, minced garlic, Italian herbs and salt and pepper) and mix well.
Making the pasta
1. Bring a pan of water to boil while the veg is roasting.
2. Add the pasta and cook.
Finishing the dish
1. Keep some of the pasta water aside and drain the pasta.
2. Add some of the pasta water to your sauce.
3. Remove the veg from the oven and add it to the pasta.
4. Pour the sauce on top and serve.
5. Could top with more parmesan or add another cheese such as cheddar or mozzarella (optional)
